Applesauce Muffins

So I decided to bake this morning, though turning on the oven in this heat probably wasn't the best idea I've ever had!

I googled "applesauce" muffins and came up with a few hits.  I picked one and modified it a bit as I didn't like the amount of salt the recipe called for and I increased the cinnamon.

Ingredients:
1 1/2 c apple sauce
1 c white sugar
1 egg (slightly beaten)
1/3 c melted butter or margarine
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt (original recipe called for 1/2 tsp)
1 tsp cinnamon (original recipe called for 1/2 tsp).

In a medium bowl, combine applesauce, sugar, egg and butter together.  Place to the side.
In a small bowl, combine dry ingredients and mix together.
Fold dry ingredients into wet ingredients until well mixed.
Fill muffin cups 1/2 way and bake at 350∘ for 25 min, or until cooked through.

Yields 18 muffins.
