A Better Me, One Year Later

Tomorrow marks exactly one year since I started on the path to a better me.  It seems like only yesterday.

You may be wondering why I haven't posted these past few weeks.  It's not that I haven't wanted to, even though I have struggled.  It's simply poor time management.  In August I started a new career path and between adjusting to new schedules and the start of school, Guiding, Scouting, dance and hockey, I barely have time to pee, let alone get online to blog.  But as I approach this anniversary, I decided to make the time to post my progress.

I'm down 3.5 lbs at today's weigh in, that's 92.6 lbs total!  It hasn't been easy, no matter how well I seem to have done. I've struggled the past few weeks.  I haven't been working out, and I've found it increasingly difficult to eat on plan.  Things I had no trouble saying "no" to I now want to eat.  I'm lax in weighing and measuring and that's getting me into trouble.  Thankfully, I didn't have gains too high.  I was up 1.1 and .9 a couple weeks; but, with my loss today I'm back on track.  

My 5km Run or Dye event last Saturday definitely helped me get refocused.  Even though I walked the whole thing with Pretty, seeing the others running made me want to get back to it and I have a run planned for later today.

Looking back, I know that I couldn't have done this without support.  Not only from my family and the Weight Watchers staff; but, from friends and strangers.  Going online with my progress has kept me accountable and has kept me going.  So thank you to everyone who has followed my journey and sent me words of encouragement.  I still have about 40 lbs to go till goal; but, I will get there.

A Better Me, Week 47

Wow, what a week!  I got in some great workouts and am pleased to report I was down 1.5 lbs this week.  That puts me at 90.2 lbs so far.  I'm closing in on that 100 pound milestone.

It seems like things are just falling into place lately.

I left my job with Girl Guides of Canada a few weeks ago and started my new career on August 5.  I'm now very pleased to be working with RBC as a Banking Advisor Intern; or Account Manager/CSR.  It's something new and challenging and I'm loving every minute of it.
The best part?  I haven't let this life event change my new routine and eating habits.  If anything, it's only made me stick to them that much more.  I'm looking forward to learning more and becoming the best I can be; both at work and play.

A Better Me, Weeks 45 & 46

Oops, I totally forgot to post last week.  The good news, I was down 3.7; which more than made up for the gain the week before.  That put me at 85 lbs lost!  It still seems so unreal most days.

This week, I'm down another 3.7 lbs!  Seems to be a trend happening, lol.  That makes it 88.7 lbs lost to date and it also gives me a new first number!

So exciting.  My hard work and determination is definitely paying off.  I can't wait to see what the future holds!

Monster High Costume for Pickle

It's the final week of July and as I was shopping with the kids yesterday, I noticed the stores are flooded with back-to-school items.  It seems like summer just started; how, is it back-to-school shopping time already?

It also made me realize that Hallowe'en is just around the corner.  Time to start discussing with the kids what they'd like to be this year.  Pickle is obsessed with Monster High lately; and so I decided to order her a Monster High Costume from Anytime Costumes.  

They have a wide variety of Pretty Monsters to choose from.  I opted for a Frankie Stein child costume in size small.  


I received the costume less than a week after getting the shipping notice; only 4 days in fact.  I don't know if this is standard; but, I'm impressed.

The package contains the dress, which zips up the back making it easy for Pickle to get in and out of. Of course, this does mean I have to stop to zip and unzip her every 5 minutes.  It also comes with a set of tights to match and the Frankie Stein wig!!!  This is a big bonus and one that Pickle is absolutely over the moon about.  Too often, you're forced to buy the costume and then all the added accessories to get the right look.  What child is happy being her favourite Monster High character, if she doesn't have the monsterific hair to go with it?

I had barely opened the package before Pickle was in the dress.  She's told me she's going to wear it every day.  Hmm, we'll have to see how that goes!

Here's my little Monster, all dressed up.  She's be rockin' out to the Character Songs too.  So cute.


All in all, I'm one happy mama.  The costume arrived quickly, it's decent quality and my little Pickle is super excited to be Frankie Stein this Hallowe'en.  Of course, the twins are now bugging me to order them costumes as they think Pickle's is awesome!
I would definitely recommend checking out the Monster High Costumes for your little ghoul this year.

A Better Me, Week 44

Ugh, I was up 1.9 lbs. this week.

I'm upset with myself; but, at the same time, I see how far I've come and a small gain is not the end of the world.  It is a wake-up call for me to do better though.  I know that we ate a lot of salt last week.  Corn on the cob is finally in season and living in farm-country, we get some really GOOD corn here.  But what's corn on the cob without butter and salt?  Add to that a night at the drive-in with popcorn, no butter, and deep-fried dill pickles and well...I can understand the gain.

I had my pity party and now I'm moving on.  I have had a good couple of days and I plan for my week to continue that way.  ONEderland is right around the corner and I WILL get there.

A Better Me, Week 43

OMG, those frittatas I wrote about yesterday are DELICIOUS!  I actually ended up modifying the recipe a bit and will post the updated PointsPlus values once I've got them calculated.  I don't expect much will change though.  These are definitely a win and what's better, I have about 6 left over to freeze and have as grab n'go meals!

As for my progress, I'm down 2.6lbs this week!  I'm a little surprised given I've had a bad week in terms of motivation and haven't worked out; with the exception of an hour on the treadmill Monday.  I'm definitely happy the scales moved in my favour though.  Definitely keeps me going and pushes me harder when I see results.

Can't wait to see what this week brings my way.  Sending everyone healthy, skinny, kick 'me in the pants vibes this week!

Good Food Matters, Ham Cheese and Veggie Frittatas

I've mentioned in a few posts that I love trying new recipes on my #weightlossjourney.  I'm hosting a brunch and jewelry party tomorrow and I wanted some WW friendly items for myself and a few of the guests who are also on their own journey to a #betterme.  Of course, Google, is my friend and I came across the below recipe.  I'm going to try it out and I'll come back to let you know how it goes.

WEIGHT WATCHERS INDIVIDUAL HAM, CHEESE AND VEGGIE FRITTATAS

Author:  Martha - Simple Nourished Living
Prep time:  15 min.  Cook time:  25 min.  Total time:  40 min.

Individual ham, cheese and veggie frittatas baked in muffin cups make an easy, healthy breakfast, lunch, supper or snack item.

INGREDIENTS:

- cooking spray
-  1 pound frozen has brown potatoes, thawed
-  4 large eggs, beaten
-  1 TBSP fat-free milk
-  salt & pepper to tast
-  2 oz.  cooked lean ham, finely chopped
-  2 TBSP finely chopped sweet red bell pepper
-  2 TBSP finely chopped green bell pepper
-  2 TBSP finely chopped green onion
- 1/2 cup low-fat shredded cheddar cheese

INSTRUCTIONS:

1.  Position an oven rack in the centre of your oven and preheat oven to 350 F.  Generously coat 8 muffin cups with cooking spray.

2.  Press the defrosted hash browns into the bottom and up the sides of each muffin cup to form a crust.

3.  Bake for 15-20 min

4.  Meanwhile, make the filling:  In a medium bowl, beat the eggs and milk together.  Season with salt and pepper.  Stir in the ham, peppers, onion and cheese until well blended.

5.  Remove the potatoes from the oven and press them down firmly with a  spoon so that they are like a mini pie crust lining the bottom and sides of the muffin cups.

6.  Divide the mixture evenly, pouring it into the centre of each muffin cup.

7.  Return to the oven and bake until the potatoes are crisp and golden and the egg mixture is set; approx 15-18 min.

8.  Remove from the oven and let sit about 5 min before serving.

A Better Me, Week 42

Okay, so this week's loss could almost be called staying the same.  I was down .2 lbs.  Not even a full pound.  But, as one of my friends pointed out, it's still the scale moving in the right direction.

So I'm staying positive, it's not a gain and a loss is a loss.  This week is a new week and I'll get the results I want!

A Better Me, Week 41

Down 1.1 lbs this week!  Woot, happy dance. 

You may wonder why I'm so happy about a 1.1 lb loss.  I gotta tell ya, I wasn't feeling it this week and thought for certain the scale would show a gain...but, it didn't!  I'm so freakin' happy.  This week's loss puts me at 80.4 lbs lost to date. 

I've been continuing with my C25K program.  I'm almost finished with it on the treadmill.  I can run for 25 min, non stop.  It's not pretty; but I can do it.  Only 28, 30 and 35 min intervals remain until I finish the program.  That's 3 workouts; that I have temporarily put on hold.  Wait, what?  I know I just said I'm continuing with the program and then I say I'm putting my last 3 workouts on hold?  Are you confused yet?
Don't be.  I've started the program over, outdoors.  I tried running outside in this glorious weather we've been having; but, it's SO much harder than on the treadmill.  I'm dying out there and so I've taken it back to basics after trying to do it on my own and failing.  The program is structured enough that it pushes me harder, if that makes any sense?  I've done the first two workouts so far and it's painful, but I feel good afterward.  I think a lot of it is my gait and speed are longer/faster outside.  Not to mention the terrain is constantly changing and I can feel my muscles adjusting with every stride.

I'm also doing a 30-day squat challenge.  I think I may have mentioned this before and I gave up.  The challenge I was trying previously was too aggressive too fast.  My legs were so sore I couldn't even sit to go to the bathroom.  This new version of the challenge is not as aggressive but I still feel the burn.  Today is day 80, 90 squats.  Not looking forward to it on run night, but I'll get it done.

A Better Me, Week 40


(Happy belated Canada Day)

We've had some family fun the past few days, which is why my weekly update is late.

I was back for another Saturday weigh-in and was down 1 lb.  That's 79.3 lbs total...I know, so close to 80!  That's something to look forward to this week :)

So far, things have been slow for me this week.  We went to the US yesterday, I know ironic to spend Canada Day in the States.  Of course, a trip to the US wouldn't be the same without lunch at Olive Garden.  Did you know there's nothing that's really points friendly at Olive Garden?  Shocker, right?  I ended up having the cheese ravioli in marinara sauce...the lunch-sized portion for a whopping 13 points.  Thankfully, I couldn't eat it all and only managed about 2/3 of the serving which dropped the points value.  But add in a bread stick and some salad and I'm right back up there.  On the flip side, I was able to track my activity using my new FitBit!  I love this handy little tracker Mr. Twingle bought me as a belated birthday gift.  It tracks my steps, active minutes, sleep patterns and more.  I was able to see that I walked over 8000 steps yesterday!  That's pretty crazy for a day of grocery shopping.   I don't usually put in my walking for Activity Points, but I know that all the walking throughout the day will help burn off the extra calories I really didn't need...but were oh, so good!

I've also restarted the 30-day squat challenge.  The one I was doing previously was too aggressive and I was hurting.  I could barely move most days and it hurt to try and sit to go to the bathroom.  This new one doesn't seem so bad, I guess only time will tell.

A Better Me, Week 39

Have I mentioned how much I love my Saturday morning weigh-ins and meeting?  This week I'm down 6.1lbs!  That more than makes up for last week's gain.
This loss puts me at 78.3 lbs lost so far; and another milestone under my belt.  Next stop ONEderland!  I'm so close I can taste it!  
Wish me luck.  I'm going to need it.  I have. A feeling these next milestones are going to be tougher to reach.  I'll do it, but it might take me a while.

A Better Me, Week 38

That'll teach me to change my weigh in from first thing in the morning until after dinner.  Due to another weekend at camp, I weighed in last Wednesday night after work, instead of my usual Saturday morning.  I was up 1.6 lbs; but I'm taking ownership of it.  Yes, it was after a full day of meals and snacks; but, I had also fallen victim to the snack monster earlier in the week and ate anything that wasn't nailed down.  I did track it all; but, I really didn't need it or want it.

That said, I'm back on track this week and rockin' it!  It's Tuesday and I've already earned 18 activity points this week and I managed to finish Week 7, day 3 of the C25K program last night...that's a 25 minute run!  WOOT!  It sucked and I was cursing the whole time.  In fact, I wanted to give up around 12 minutes; but, I pushed on knowing I had already done 20 minute runs and 5 more minutes was totally within my reach.  Here are my before and after accountability photos, LOL.


I'm looking forward to weigh in on Saturday and getting back in the game.

A Better Me, Week 37

Despite an early weigh in, I'm down 2.1 lbs; and that was wearing JEANS!  I normally weigh-in in yoga style capris/pants as jeans can add 1.5-3 pounds to the scale.  I was very happy with my 2.1 lbs. loss and I'm motivated to keep pushing.  I'm only 1.2 lbs away from that 75 lbs milestone.  Here's hoping I hit it this week!

My activity has been steady.  I'm still working my way through the C25K program; now working at 20 minute run intervals.  I should be at about 3K; but realistically, it's only about 1.5K since I don't "run" very fast.  I tried increasing my speed last week from 3.5 mph to 4.0 mph and I couldn't believe how much of a difference a half a mile per hour made.  I was sweating and breathing pretty hard.  I dropped back to 3.5 for my run last night as I don't think I could do 20 minutes at 4.0...at least not yet.  I will get there; but it may not be for a while.  The heart and lungs are muscles and like any other muscle, you need to build it up.  I have every intention of doing that.

I'll be weighing in early again this week; tomorrow in fact.  Stay tuned :)

Throwback Thursday and Week 36

It seems like #TBT is catching on and so I thought I'd share my own #TBT photo while giving you my week 36 update.

First, the update...I have nothing to report.  Week 36 was incredibly busy and I was unable to get to Weight Watchers for my weigh-in.  Saturday, my normal weigh-in day, had me at Canada's Wonderland with my Guides and Pathfinders for Rally day.  I'll write about that in a separate post.  I will be weighing in tomorrow for week 37, as I'm at camp this weekend with my girls so tomorrow is the only chance I'll get this week to weigh-in and I can't go another one without finding out how I'm doing.  While I know my #weightlossjourney is not about the number on the scale, I need to see the number to stay focused.  So stay tuned for my update.

And now, my #TBT photo.  This was taken the summer I turned 16 in Coleman, PEI.  I was visiting my aunt and uncle and took a liking to the horses up the street.  So much so, that I was able to help out everyday and I got to lead my cousin around on the horse.

Am I a Runner?

I came across an interesting discussion online today and I'm not sure how I feel about it.  The gist of the conversation says that running at 6 mph does not make one a runner; that's a slow jog.

I read this and thought, SERIOUSLY?  I "run" at 3.5 mph and I don't find that easy.  I can't even fathom what running at 6 mph looks like.
I'm not naïve to think that I run fast.  In fact, when I'm tracking my activity points for Weight Watchers, I always count it as a jog.  I have tried going up to 4 mph; but I'm just not there, yet.

My question is this:  Am I a runner?  Does running/jogging at a slower pace mean I'm not worthy of the title?  Where does one come up with the rule that says 6 mph is a jog, not a run.  Think about it, people are different.  Different shapes, sizes, heights, weights and fitness levels.  How can it be that someone incredibly fit can run at 8 or 10 mph and frown upon someone who has never run before and is now doing so at 3.5 mph?  I don't get it.  Isn't the important thing here being active and living a healthy lifestyle?  What should it matter what speed you run at?

I'm so proud of how far I have come.  I've been on the Weight Watchers program for 8 months and I've lost over 70 lbs and I can "run" 15 minute intervals at 3.5 mph.  I can't say I even came close to that at any point in my past; even in my youth.  In my mind and in my heart, I AM A RUNNER.  I may not be fast and I may not look pretty doing it; but damn it, I'M DOING IT!

A Better Me, Week 35

Woo hoo!  That .2 lbs I had to reach to make 70lbs lost has be reached and more.  Today's weigh in had me down 1.9 lbs.  That puts my running total at 71.7 lbs!  That 75 lbs. milestone in right around the corner.

This week was good.  I got in lots of activity including gardening, a 6.4km walk, two C25K workouts with 10 minute run intervals and lacrosse practice with Boo!  Even though I was sore quite a few times this week as a result, it feels so good.  I can't believe I'm able to do some of the things I'm now doing.  I think back to where I was 8 months ago and there would have been no way I'd do any of them.

This #weightlossjourney has changed my life for the better and it's a path I tend to follow until the day I die.

A Better Me, Week 34

Happy Victoria Day weekend!  It's a chilly and gray Saturday; but that hasn't put a damper on my day.  It started off early as we got up to attend Boxing Day in May at Terra greenhouses.  We got all our veggie plants; but we're going to hold off on putting them in for a couple of days as there is a risk of frost overnight.  I also got two gorgeous hanging baskets, a flat of petunias and some marigolds for the front garden.  Can't wait to make things pretty!

From Terra, I went to get weighed and I'm down 2.6 lbs!  I'm SO close to 70 lbs. lost.  My total is 69.8 lbs so far.  I thought I was at 67.9 after last week; but it was only 67.2.  While I was a little disappointed when I got my total, it gives me something to look forward to next week.  My 75 lb. milestone is just around the corner and from there 100 lbs and more.  It's exciting to see how far I've come even if I still have so much farther to go.

My workouts are progressing.  I'm still doing the C25K program and last night I was up to 8 minute run intervals.  Monday I jump to 10 minute intervals; I'm nervous and excited at the same time.  Today Pretty wanted to go for a run, so she and I went outside.  Did I ever tell you, it's a lot harder to run outside than on the treadmill?  So I took it easy on both of us and started with the very first workout, 1 minute run intervals.  Pretty struggled even to keep up with the walks, but we got it done. Even if she didn't run, she was still getting in activity which is something she doesn't do regularly.  We'll go out again and she'll get there; it'll just take time.  

Anyway, I'm off to enjoy the rest of my weekend.  I've got gardening, cleaning, basement/office rearranging and a trip to the zoo planned for the rest of the weekend.  Hopefully, I'll fit some more workouts in too.

A Better Me, Week 33...a little late

Oh my, how did the week get away from me.  Just a quick post to say I was down .9 lbs at last Saturday's weigh in.  I was a little disappointed by this considering I was back on course with my C25K work outs and even bumped up my interval times.

But, a loss is a loss and I'm still doing great.  67.9 lbs lost as of last week.  Hopefully, the scale will be kind to me tomorrow.

A Better Me, Week 32

Another week, another weigh-in.  I was down 2.8 lbs at this week's weigh-in which I was a little surprised by.  The week was insanely busy with Mr. Twingle out of town and I wasn't eating right at all.  In fact, there were several days when I didn't even come close to eating my points; which is NEVER a good idea.  I won't be at all surprised if I have a gain this coming week as a result.

It was also bad in the sense that I really didn't get the chance to work out like I would normally.  I think I fit in one 30-minute workout all week and I was feeling it.  I'm back on track to do my Mon, Wed, Fri work outs this week, so here's hoping things go according to plan.

I want to take a moment to wish two of my friends good luck on their own #weightlossjourney as they joined WeightWatchers on Saturday.  Good luck ladies, you've got this!

A Better Me, Week 31

I bet you all thought I forgot to post this week, or worse that I had a gain and was embarrassed to post about it?

Not the case.  I was down 1.5 lbs at weigh-in on Saturday!  That's 63.5 lbs total and I'm feeling awesome.
I was off to Great Wolf Lodge with my girl guides right after weigh-in and this week has just been CRAZY with Mr. Twingle out of town.  That's why I'm so late in posting this.

The upside to the late post, you don't have to wait so long for my next one :)

A Better Me, Week 30

First, let me wish everyone a very Hoppy Easter!  Even if you don't celebrate the holiday, I hope you're enjoying the beautiful long weekend.

I'm back!  Yesterday's weigh in was better than I had hoped.  My wish was that I would lose at least the .8 I gained, and maybe a pound or two more.  I lost 4.3 lbs!  That makes my total to date 62 lbs!!!

I have had so many people congratulate me and tell me how well I'm doing and I love you all for your support.  But, I have had several people tell me I have inspired them to become healthier themselves. Some have joined Weight Watchers; others are just getting more active and making healthier choices. Either way, I'm glad I've been able to share my journey and show others that it's really not that hard; and the rewards are beyond anything I ever dreamed.  It's not just the physical rewards of looking and feeling better; it's the emotional rewards too.

I still have a long way to go; but, I'll get there.

A Twist on Taco Night

I think my new favourite website is emilybites.com.

We tried another of the recipes found on her website last night; the taco casserole bake.  We changed it up a little bit though as some items come in different sizes in the States than they do here in Canada.

I'm going to share the recipe with you as everyone loved it.  The twingles like it; but found it a little too spicy, so next time we'll cut back on the chili oil.

Taco Casserole Bake

yield: 6 SERVINGS (ours: 8 servings)

INGREDIENTS:

  • 24 Baked Tostitos Scoops (We used 40)
  • 1 T Chili Oil (I found this in the Asian foods aisle) - if you are considering replacing this with regular oil please note the chili oil adds a lot of spice and flavor to this dish, so replacing it will affect the flavor profile
  • 1 Onion, chopped
  • 2 garlic cloves, minced
  • 1 ¼ lbs extra lean ground turkey (I used Jennie-O which comes in a 1.25 lb package)
  • 2 T taco seasoning (I used my homemade recipe, not store bought)
  • 15 oz can black beans, drained (We used a 19 oz can)
  • 1 c salsa (I used medium) (We used 2 cups)
  • 1 c reduced fat shredded Mexican cheese (we used regular shredded Mexican blend)

DIRECTIONS:

  1. Preheat oven to 350 degrees.
  2. In a large skillet, warm the chili oil and sauté onions and garlic until softened. Add ground turkey and taco seasoning, break up into pieces and cook until meat is browned. Mix in salsa and beans and cook for a few more minutes until salsa thickens.
  3. Break up the tortilla chips into bite sized pieces and use them to line the bottom of a 9x13 baking dish. Evenly spread the meat mixture over the chips and then sprinkle cheese over the top*. Bake for 20 minutes.

A Better Me, Week 29

The streak has ended.

I'm up .8 lbs this week; and you know what?  I'm okay with it.

I had my 30 second pity party; but I own it and I move one.  Today is a new day and it's a new week.

I fully expected a gain this week and .8 is nothing in the grand scheme of things.  I'm still down 57.7 lbs in 6.5 months.  It was really hard to get my usual workouts in this week.  After my tattoo last Saturday, I haven't been able to put on shoes; which means walking or running on the treadmill are out.  I did pull out the WiiFit and did some yoga and hula hooping; but really...how much exercise can one really get playing Wii?

I tried walking in flip-flops, the only shoes I can really wear at the moment that won't rub/chafe the tattoo, and there's just no support in them.  My poor arches were screaming at me.  Hopefully, I'll be able to get shoes on at some point this week.  If not, I'm going to have to find other ways to be active. I don't plan on having another gain.

I'm looking forward to a four-day work week and some quality family time.  I'll be bringing my scale along on Sunday for Easter dinner to ensure I'm staying on plan.

Mom Ink


I did it; and I'm SO happy with how it turned out!

Yesterday, my sister-in-law and I went to get tattoos.  She was having a butterfly on her back covered up with a gorgeous tropical flower scene.  I got the twingles' names on my left foot; yup "mom ink"!

It's been more than 17 years since I got my first tattoo and I got myself all worked up leading up to yesterday.  I made the mistake of googling foot tattoos and aftercare.  Most of what I found said I was going to have to keep it elevated and iced and I wouldn't be able to walk well for at least a week.  So I was starting to second guess my decision; but, I'd already put down a non-refundable deposit, no way was I going to back out.

All the way to Kitchener, I had those nervous/excited butterflies fluttering in my stomach.  I made a point of eating before the appointment as I remembered the tattoo parlour telling me to do so when I got my first tat.

When SIL and I finally got to Perfect Image, the butterflies disappeared and I became totally excited. I wasn't even really afraid to begin with; I think it was just the adrenaline leading up to the big moment.  

I went first and it took about 30 minutes.  It wasn't long at all and it wasn't even really that painful.  It was like a cat scratch; a constant, annoying one...but nothing more.  The only spot that was really tender was right under my ankle bone toward the heel.  Even then it wasn't unbearable.  The scratchy irritating feeling lasted about 3 hours or so, and then my foot felt fine.  I cleaned it last night when I got home as per my instructions and I've been keeping it moisturized.  I even went for a walk with the girls today without any trouble.  

I'm so happy with how it turned out.  It was definitely worth the anticipation and scratchiness.  

I got Pretty to take a pic this morning; so just over 12 hours old; it looks pretty good if I do say so myself :)

I think everyone needs to have a reward in mind when they reach a goal.  I have my next goal set; but haven't yet decided what my reward will be.  I'd love to say more ink; but, that's not going to happen. Maybe it'll be a trip somewhere fabulous.  I'm going to have to think a bit more on that one and I'll post when I've got it sorted out.

A Better Me, Week 28

Another week's weigh in and the streak continues!  1.8 lbs lost this week.  I had a great week.  I got four work outs in, tried some fantastic new recipes and I just feel good!

Today is tattoo day.  If you've been following, you'll know that my reward for reaching the 50 lbs lost mark is a tattoo.  My sister-in-law and I are bonding over ink...love it.

Can't wait to see how it turns out.  It's been a while since I got my first tattoo, and I'm a little nervous about today; but, I'll get through it like I always do.  A little pep talk and a whole lot of determination will have me loving the end result.

Baked Chicken Recipe

Over the past six months we have tried a lot of different recipes.  Most of these have come from the Weight Watchers community; but not all.

I wanted to share one that has quickly become a favourite in the Twingle household.  We all love chicken, but this recipe is YUMMY!


Baked Chicken
Yield:  serves 4

INGREDIENTS: 

1 spray cooking spray
4 - 4oz. boneless skinless chicken breasts 
1/2 tsp table salt
1/4 tsp black pepper, freshly ground
1 tsp olive oil
2 tsp fresh lemon juice, or more to taste
2 tsp dried rosemary
2 tsp fresh parsley, chopped
1/4 cup canned chicken broth (I use low-sodium)
1/2 medium lemon, quartered, for garnish

DIRECTIONS:

1.  Preheat oven to 400°F.  Coat a shallow roasting pan with cooking spray.
2.  Season both sides of the chicken with salt and pepper.  Transfer chicken to prepared pan and drizzle with oil; sprinkle with lemon juice, rosemary and parsley.  Pour broth around chicken to coat bottom of pan.
3.  Bake until chicken is cooked through, about 30-40 minutes.  Garnish with fresh lemon.

Yields 1 chicken breast per serving.

Weight Watchers Points Plus:  4 per serving.

Delicious Chicken Parmesan Casserole

One of my favourite meals is chicken parmesan.  Of course, since starting my #weightlossjourney I haven't indulged in this high calorie meal...until last night.

Facebook is a wonderful thing and one of my "friends" posted this recipe earlier in the week.  We decided to try it last night and I think I may have died and gone to heaven.  Even the kids devoured it!  This recipe is definitely a winner and one that will make it into regular rotation in my menu planning :)

Chicken Parmesan Casserole

yield: 8 SERVINGS

INGREDIENTS:

2 lbs raw boneless, skinless chicken breasts, cubed
2 cloves garlic, minced
¼ t crushed red pepper flakes (or more to taste if you want it hot)
¼ cup fresh basil, finely chopped
2 cups marinara/pasta sauce (I used Wegmans Tomato Basil)
1 ½ cups 2% reduced fat shredded mozzarella cheese, divided
2 oz Parmesan cheese, freshly grated (I used the smallest holed side of my box grater), divided
3.5 oz garlic croutons, roughly crushed, leaving some larger pieces (I used New York Texas Toast brand Garlic & Butter)

DIRECTIONS:

  1. Preheat oven to 350 degrees. Lightly mist a 9 x 13 baking dish with cooking spray.
  2. Spread the cubed pieces of chicken across the bottom of the baking dish in a single layer. Sprinkle the minced garlic, red pepper flakes and basil evenly over the chicken. Spread the sauce evenly across the top. On top of the sauce layer, sprinkle ¾ cup of the Mozzarella and one ounce of the Parmesan evenly across the dish. Sprinkle the crushed croutons across the top and follow with the remaining cheese.
  3. Bake for 40-45 minutes. Let stand for 5 minutes before serving.

A Better Me, Week 27

The streak continues.  27 consecutive weeks of losses!

I'm down another 1.3 lbs this week.  My total?  56.7 lbs lost.  I'm closing in on 60...I have it in my sights.

Today, Sharon and I went to our Weight Watchers meeting and it was fabulous as usual.  Our leader, Sue Smiley (possibly the BEST WW leader ever), asked us what inspired us to join WW and what keeps us motivated.  I shared that I joined to become healthy for me and to ensure that I'm around for my kids as they grow older.  I also shared that my kids are what keep me motivated especially when Pretty, who is not active at all, asked if she could learn to run with me!  That's a huge step for her and for me.  It gives me the strength to keep going but it also shows that she has noticed me taking pains to become healthy and wants to join me on my journey.  Talk about a proud mama moment.  I got a bit emotional and everyone was so supportive and sharing in my moment.  It was great; but, it got better.  Sharon shared how we joined together and I am what keeps her motivated.  Of course she made me cry. Sharon is my biggest cheerleader and supporter and I really couldn't do this without her.  Together we are on a path to healthier versions of ourselves and we challenge each other to keep moving forward.  It's moments like this, the shared stories at the WW meetings that make me love Weight Watchers.

My Saturday morning was topped off with a much needed pedicure.  Sharon and I bonded over cuticles and polish; and my toes & feet are now flip flop ready.  Bring on spring!

A Better Me, Week 26

26 consecutive weeks of losses! 

Yep, I'm down another 2 lbs this week; making my total 55.4 lbs to date. 

I'm pretty sure 26 weeks of losses is not the norm.  I keep waiting for me to hit that plateau; but, so far it hasn't happened.  Don't get me wrong, I'm quite happy to keep losing.  It means I'm well on my way to the new and improved me.  I know it helps keep me motivated when I see those pounds dropping off.  But, I'm not naïve and I know I won't continue like this.  I will plateau at some point and I need to stay positive to overcome that hurdle when I get to it.

I had an overwhelming response to my 6-month progress report post, thank you for all the love and support.  The way I see it, the more people that know about my #weightlossjourney, the more accountable I am for how I move forward.  So feel free to share with your friends, family or anyone you think might feel inspired by my story. 

I also couldn't do this without the help of Weight Watchers.  I have learned, and continue to learn, how to shop, eat and prepare meals for myself and my family.  Through WW, I've learned that there is nothing I can't eat; but, I look at every food and decide if it's something I really, really, REALLY (thanks Sue Smiley) want before eating it.  I still indulge in a glass of wine or a slice of cake now and then; but, WW has taught me that I do have the willpower to say "no", or to have a smaller piece and savour it instead.

6-month Progress Report

Today marks the 6 month anniversary on my #weightlossjourney to a #betterme.  I'm so proud of how far I've come, even if I still have a long way to go.

A Better Me, Week 25

Happy St. Patrick's Day!  I love being able to celebrate my Irish heritage.  I'm a proud 1/8 Irish-Canadian 365 days a year; but on St. Paddy's day, my blood runs a little greener.

I'm happy to post that I was down 1.6 lbs at this weeks weigh-in.  That makes 53.4 lbs total so far!

I've also put my 50 lb reward into action.  I told myself when I lost 50 lbs, I could get the tattoo I've been wanting for 17 years.  Last week, my sister-in-law and I had a consultation and we're both booked in for tattoos on April 5.  I've put my deposit down, it's non-refundable, and I'll be inked soon!  I can't wait.  I'm getting the Twingles' names on my left foot.  It's going to hurt something fierce; but no pain, no gain!

I've also continued with the C25K challenge.  I started Week 3 last night.  That one was rough.  Bumping my 1.5 minute runs to 2.5 minutes doesn't seem like a big jump; but when you're not used to it, it hurts!  I made it through by psyching myself up before every run.  "You got this, you can do it, it's only 2.5 minutes", that type of thing.  My plan is to do day two tomorrow after Guides, so I'll let you know if it gets any easier.

A Better Me, Week 24

Grand total = 51.8 lbs!

Week 2 of the C25K started last night.  It was a little tougher than week 1, which I expected.  So far, it's not as bad as I had feared.  My knees have been hurting though and I don't know if that's the weather, since I've always had knee issues in the damp and cold, or if it's the running part of the program.  I wouldn't think 8 minutes on a treadmill would be that hard on my knees; but who knows?

Any way...that's my week so far.

I know short and sweet this week.  Sorry.  I've got a ton of stuff to do.

Book 2, #50BookPledge

If you follow my blog, you'll know that the twins and I are all avid Harry Potter fans.  When I discovered the fan-fiction spin off series last year, I was skeptical and excited all at the same time.  I set out to read the first book, James Potter and the Hall of Elder's Crossing, not really knowing what to expect and hoping I wouldn't be disappointed; I wasn't.  You can actually read my thoughts on the third book, James Potter and the Vault of Destinies, here

It shouldn't come as a surprise then that my second read of the 2014 #50BookPledge is the fourth book in the spin-off series; James Potter and the Morrigan Web.  In the fourth installment of the series, James is a little bit older and just as determined to save the Wizarding world.  I wasn't sure where Mr. Lippert would pick up after book 3 and was pleased to see he picked up right where he left off.  It had been some time since I read James Potter and the Vault of Destinies so it was nice to slide right back into the story and remember what had happened in the past books.

James and his family; and his closest friend Ralph, return to Hogwarts with a mixture of excitement and trepidation.  The previous year had been a challenge and they weren't quite sure what to expect upon their return.  Like Rowling, Lippert continues a series of themes throughout the series; building on the story.  With each page turned, I was sucked deeper into that story.  I wanted to keep reading.  I needed to know how it was all going to play out as James and his friends tried to cope with the new world after the night of the Unveiling. 

Serious and suspenseful with the right amount of that British humor we came to love in the Harry Potter books, Lippert does a wonderful job at keeping the reader engrossed.  I especially loved reading about some of my favourite Harry Potter characters who had more detailed roles in this book. 

There is a message at the end of this book where the author talks about the series and whether it will continue.  I sincerely hope it does as I feel like the story hasn't been completed yet.  There are more loose ends that need to be wrapped up and more stories to share. 

In the meanwhile, I would strongly recommend the James Potter series to anyone who loved the Harry Potter books.


A Better Me, Week 23





50 lbs!!!

Yep, that's right.  I'm officially down 50 lbs as of Saturday's weigh-in.  I lost exactly .5 lbs to make the milestone.  While 50 lbs is huge, I still have a long way to go.  I'm still taking it one pound at a time and this week I even started the C25K program.  So far I've done 2 workouts for week 1.  It's not as bad as I feared; but, it's not easy either.  I never thought I'd be a runner.  Not in a million years.  But if I can stick with this program, and I intend to, I'll be able to run 5km by the end of the 8 weeks.  Thinking about how the program is going to help me tone and shape my legs & butt and improve my cardio has me giddy.  Me!  Giddy about exercise!  Wonders never cease!  Tonight is run #3, or the final workout for week 1.  I'm dreading it; but, looking forward to it at the same time.  Is that weird?  Stay tuned for the results from this week's weigh-in.  Thanks for stopping by to catch up on my #weightlossjourney to a #betterme.

Feeling Good

It happened!  That moment I've been waiting for since starting my weight loss journey 5 month ago. 
I ran into someone I haven't seen in over a year; someone whom I don't speak with or follow on social media; and they noticed!  It started off with the "you look different" comment and then "did you do something to your hair?"; and then I admitted to losing 49.5 lbs.  Of course, they were very happy for me; but it wasn't even getting the acknowledgement that made me feel good.  It was the "you look different" comment that made my day.

I see my clothes fitting better, or becoming too big and I can see the weight loss in my face and neck; but, having someone else notice...someone that didn't know that I've been working towards a better me...it made me feel so good and it's given me the motivation to keep going.  I will get to my ultimate goal no matter how hard the journey.

It boggles me how one simple comment can make me feel so good.  But that's what life is like.  A series of moments coming together to become something amazing.  This is just one moment along the way!

Cheering for the Home Team


Wow!  What an amazing couple of days for the Canadian Olympic team!  Like many other proud Canadians, I've been riveted to the games.  While I'm not much of a hockey fan, my adrenaline was pumping fast a furious during yesterday's Women's Hockey Gold Medal game.  Today, our men take on the Americans in the semi-final.  Thank goodness for updates on my phone...I'll know what's happening even if I can't watch the game while I'm at work.

There's just something about the Olympics that makes Canadians (and other countries) stand proud and true.  In Hamilton, the highway overpasses have been dotted with Canadian flags; and everytime I pass one I smile to myself. 
I've always been a proud Canadian; however, the games just seem to bring a heightened sense of pride to the forefront.

And so I say this to all our Olympic athletes, medalists or not, THANK YOU for a job well done.  You've done Canada proud.

Oh yeah, and Boo got to hang out with three-time Olympic medalist Cherie Piper...and try on her Vancouver 2010 Gold medal...how cool is that?!

A Better Me, Week 21

It's a gorgeous Saturday morning in Hamilton!  I was glad to get out this morning to get weighed.  I'm down 1.2 lbs this week.  The gap on 50 is closing quickly!  I'm at 47.4 lbs lost total and I feel great.

Even being sick this week, I managed to get in some crunches and leg raises as well as a 4km walk on Sunday.  I gotta tell ya, exercising when you're sick totally sucks; but I'm glad I did it.  Looking forward to getting on the treadmill tomorrow and Monday.  I'm working out a plan this week and trying to plan my exercise nights into my schedule.  I'm always so busy with kids' stuff and Stampin' Up! that it's a last minute decision as to whether I can fit it in.  There's nothing worse that setting out to do an hour on the treadmill at 9pm and then I'm wired and can't go to sleep.  Hopefully, by scheduling and planning in advance, I'll be able to better fit exercise into my daily routine.

Well...I'm off to the pool.  Not for me, for the kids.  The mom chauffeur is never off-duty.

A Better Me, Week 20

It was another successful week at the scales.  I'm down 2.7 lbs. this week, making my total 46.3 lbs.  I got some great walks on the treadmill and a whole lot of of quality activity points playing out in the snow last Saturday at our Guide camp!  We were outside pretty much all day Saturday and it was fantastic!
I'll post about camp in a bit, so watch for that.  In the meanwhile, I'm keeping it short this week.  So have a fantastic week and check back next Saturday for this week's progress.

Delicious Homemade Tomato Soup

I'm all dug out after yesterday's 31cm of snow!  What a crazy day.  I hope you were all safe and sound and didn't have to travel too far in that blizzardy weather.

I was fortunate to be able to work from home yesterday and on a cold and blustery day I thought soup would make a perfect dinner option.  I decided to try making a tomato soup; something I've never done before.  I followed a friends' recipe and I have to say it was DELICIOUS!  Quick easy and filling, it was a hit with everyone except Boo.  Pretty, who is normally the pickiest eater around, even ate it!

When I entered it into the Weight Watchers eTools recipe builder, I was very happy to see that the soup is only 2 PointsPlus points per serving!

Here's the recipe:

3 cans diced tomatoes (approx 10 cups).
     I used the diced tomatoes I canned myself this summer and I used 2.5L worth.
4 cups 1% milk (the recipe actually called for whole milk)
2 Tbsp tomato pasted
2 Tbsp butter
1 tsp sugar
4 Tbsp flour
3 garlic cloves
Fresh basil, salt & pepper to taste.
1 medium onion chopped finely

Combine all ingredients in a slow cooker and cook on high 4-6 hours or low 8-10 hours.  I blended the mixture after it had cooked to puree the chunks of onion and tomato, making it more kid-friendly.  I also found this helped to thicken it up.

1 cup per serving.  Makes approximately 16-17 servings.

A Better Me, Week 19

It's a day early, I know.  But, I'm a Girl Guide camp this weekend.  We're taking our Guides and Pathfinders to do some winter camp skills and horseback riding.  I'm so excited.  I think winter camp is probably my favourite camp of the year.
Sadly, I now need to go by snow pants...talk about leaving it until the last minute, right?

Anyway, since I won't be able to weigh in tomorrow I went this morning and I'm happy to say I'm down once again!  Another 1.2 lbs.  That gives me a total of 43.5 lbs!  I'm closing in on 50!!!  I can't wait to get there.

A Better Me, Week 18

Wow!  Where did all that snow come from?  It was crazy out there today and I don't think it's done yet.  I hope those of you that are getting this wicked winter storm, you're home safe & sound.

I braved the weather this morning bright and early for my weekly weigh in and I'm pleased to say I'm down 1.5 lbs.  That's 42.3 lbs. to date.  I think my losses have started to finally slow down to what is considered "normal" weight loss.  At first, this bummed me out.  But today I realized, it's not about the numbers.  It's about being healthy and feeling good...and you know what?  I do, I feel great!  I did 2 hours on the treadmill this week and for the first time in my life, I'm thinking of other ways I can be active.  I've got Wii fit, that's never really been used...so I'm gonna dust that off.  We've got "Just Dance" for the Wii which has a "just sweat" programme...guess what?  I'm gonna try that too.  Oh and that exercise ball I used to use as a desk chair...it's going to be put to use the way it was meant to be.

I'm loving how much more energy I have these days.  I still have moments where I'm like...ugh, I don't want to...but then I think, yes, I do.  I want to and I need to and I do it...and I feel so much better for it.

A Better Me, Week 17

What a crazy week.  Pickle was sick Thursday & Friday.  Turns out she has Fifths disease (slapped cheek).  Poor kid has the reddest cheeks I've ever seen.
We had to attend a funeral on Monday for a family member and I had a wicked migraine on Thursday.  Needless to say, the week was rough and staying on plan wasn't easy.

I went into my meeting yesterday resigned to the fact that I was about to have my first gain.  How could I not after the week I'd had?  I was wrong.  I'm down 0.6 lbs this week.  Yep, not even a full pound; but, you know what?  I'll take it!  A loss is a loss and considering I thought I was going to gain, I'm happy to see the numbers going down.

I'm back on plan this week.  I had a delicious breakfast with my girls this morning consisting of low-fat scrambled eggs, low-fat toast and hot water with lemon.  I had an apple on side and I'm read to rock.  I managed to get some grocery shopping done and I was amazed at how fast it goes when you only shop the perimeter of the store.  All the good for you foods can be found around the edge of the store.  No need to go up and down aisles loading up on packaged, processed foods.  I thank Weight Watchers for giving me that little tidbit of information.  I was in and out of the grocery store in 20 minutes!

Lunch was low-fat yogurt, a cup of blueberries and a tuna & cucumber sandwich on low-fat bread; yum!  I'm feeling better being back on plan and I'm hoping for another successful week.

#50BookPledge, Book 1

I did it, I finished my first book of 2014.  It only took me...forever!

The book was Drums of Autumn by Diana Gabaldon.  It's the fourth book in the Outlander series and I thoroughly enjoyed it.  In fact, behind Outlander this is probably my favourite book of the series.

I love reading about Claire and Jamie and how their life on Fraser's Ridge takes shape.  But in this fourth book, Brianna and Roger have a larger part in the story line and I loved the path the story took.  I wanted to read more to find out how the four lives were going to be affected by the events of the story.

I would say Drums of Autumn is a must read for any Outlander fan.  Of course, who am I kidding?  If you're a fan, you've likely already read this and the other books in the series.

I'm on to read the fourth book of the James Potter series for my second selection of 2014.  Stay tuned for an update.

A Better Me, Week 16

16 weeks...4 months.  That's how long I've been on this #weightlossjourney, and I couldn't be more proud of my success.
Losing weight isn't easy.  Most people, who haven't struggled to lose weight, just assume that by eating better or getting off your ass the weight will just fall off.  But, that isn't the case.  Yes, eating well helps and exercise definitely improve things; but, it isn't the perfect recipe for success.  It is careful monitoring everything that goes into your body; from quality to quantity; and everything in between.

Weight Watchers PointsPlus plan has been instrumental in my success.  Tracking everything I eat, weighing, measuring and following their tips and tricks have gotten me to where I am today.  And, I'll continue to follow their PointsPlus plan until I reach my ultimate goal.

Weigh-in this week was yet another success.  I'm down 3.5 lbs.  That makes 40.2 lbs in total!  40 lbs in 4 months!!!  I still can't believe it sometimes.  That's a whole Pickle!  Yup, I lost what my littlest daughter weighs...it's CRAZY!  Boo wants to know when I've lost him.  I told him it'll be a while till I hit that weight yet; but, I WILL do it!

It was amazing yesterday to see some friends I haven't seen in a year and when I walked into the room they were all "oh my gosh, you look great!".  I can't even begin to express how awesome that felt.  All my clothes fit a little, or in some cases a lot, looser and I can see a difference in my face.  I still don't really see it anywhere else; but, the loose clothing and lower numbers on the scale are proof that things are changing.  My goal is to make it through the winter and into the spring in the clothing I have.  Then, when the new spring/summer clothing starts to come into stores, I'll use the gift cards I got for Christmas to buy new clothing for summer.  In theory they will be at least 2 sizes smaller than what I currently have in my closet for summer.  Hopefully, by next winter that'll be 3 or 4 sizes smaller and I'll need a new winter wardrobe too.
I'm well on my way to a #betterme!
